Polyglycerol Polyricinoleate : Polyglycerol polyricinoleate, commonly known as PGPR, is being seen increasingly often in commercially-produced chocolate. The good people of Wikipedia describe it as "a yellowish, viscous liquid comprised of polyglycerol esters of polycondensed fatty acids from castor oil.
